The birth of DAN

Inspired by Kazuya Endo of Blanche Associé's design philosophy of "cutlery that combines the soft curves of Scandinavian furniture and lighting with the straight lines of traditional Japanese aesthetics," he commissioned Fumitaka Hara to design the DAN cutlery, which was completed on October 10, 2000. Endo named it "DAN" after Denmark. Shortly after its release, it was adopted by the Conran Shop Shinjuku. The Conran family in France established the Conran Shop with the aim of introducing and selling European fine products to Japan, importing all of their products from Europe. Among them, DAN was the only Japanese-made cutlery. Featured in design magazines, DAN continued to receive attention, reaching 585,870 units sold as of May 31, 2024, since its release on November 7, 2000. DAN continues to live on to this day.

DAN's commitment

DAN's greatest focus is on "straight lines" and "curves." Embodying the design of Scandinavian furniture, the surface of the handle is "flat" and the underside is "rounded" when set on the table. Also, with regular cutlery, the joint between the plate and the handle is expressed with a smooth curve, but this takes away from the sharpness of the design, so DAN has expressed a clear straight line at the joint, emphasizing the contemporary design.



The knife has a traditional Nordic knife blade, with a short, wide cutting edge. About 30 years ago, European-style knives with a "jaw" were the norm. A knife's jaw is a protruding part where the blade and handle meet. While most modern knives have lost their jaw due to a lack of craftsmen, DAN knives still retain their jaw. Respecting the basic design of DAN, we have continued to hand-polish our knives to this day, training our craftsmen without changing the shape of the blade. Furthermore, DAN knives have different shapes on the front and back. The joint between the blade and handle is straight on the front and curved on the back. We took into consideration how force would be applied during sharpening, and took care not to destroy either shape.


The fork is a traditional Nordic vase-shaped fork. In Nordic dining, food is not only used for stabbing, but also for placing food on the fork's plate, which is why the plate is round like a spoon. This traditional vase-shaped fork makes it easy for Japanese people, who eat a variety of foods, to scoop food. As forks are usually divided into four blades, they are shaped so that all four blades line up neatly when they are raised into a three-dimensional shape. DAN's forks shine with their craftsmanship, as they need to be shaped to follow the curves of the vase shape. Each craftsman uses their many years of experience to adjust the force of the flexion press and apply the appropriate amount of force to complete the product.

The spoons are made with Japanese users in mind, and are shaped with a sharp curve that raises the tip of the bowl, making them comfortable to hold and use when bringing to the mouth. This design ensures that the angle of the jaw line looks beautiful when the spoon is brought to the mouth. Spoons overseas are wide, but they are narrowed to fit the Japanese mouth. At the same time, this makes machine polishing difficult. This is where Tsubame's craftsmanship comes in. This problem is solved by first polishing by hand any parts that cannot be polished by machine.

DAN Paintknife

They are used to spread or spread various ingredients onto bread. There are serving butter knives and butter dishes, and butter is served on individual butter plates from the tableware used to serve butter. Butter knives (also called spreaders) often have rounded tips. When serving jam, a jam pot and jam spoon are used as tableware.
